Ice cream has suddenly become a major staple of my summer diet.
It started with local creemees in early summer, then it turned to hard ice cream during our vacation in Maine. While I’m embracing the official dessert of summer, I’m also starting to crave a little something different. Something lighter, but still sweet and summery. So, in order to inspire myself (and maybe you, too!), I came up with this list of simple summertime dessert ideas.
Popsicles
Stay cool this summer with popsicles. There are plenty of options at the store, but DIY popsicles are fun and easy, too! Combine fresh or frozen fruit with juice, yogurt, or pudding and enjoy the endless flavor possibilities.
Fruit Parfait
This is a dessert I’ve been enjoying for years, especially when I’m trying to keep things light. I prefer to make my parfaits with just fruit and whipped topping, although you could also use granola along with yogurt, pudding, or whipped cream.
No Bake Pies
It might be too hot to use the oven, but that doesn’t mean you can’t enjoy a cool pie with a no-cook filling. No bake peanut butter pie is my favorite! Check out this list of no bake pies for inspiration.
Angel Food Cake
Angel food cake is a perfect light summer treat, especially when paired with fresh berries and whipped cream. I’ll be honest with you, I have always used a boxed mix for angel food cake or bought one premade at the store, but making an angel food cake from scratch appears pretty simple.
