Paleo “Bread” Base Recipe

Sensitive to particular food groups? Eating Paleo? Looking for a flavorful “bread” recipe that is healthy and low on the glycemic index? I’ve got one to share with you!

My mom and I came up with this “bread” base recipe is incredibly quick, easy, and versatile. You can add vegetables for savory bread, or bananas for sweet bread. This recipe does contain coconut and eggs. I have made this without eggs and used flax and a combination of apple cider vinegar and water. It came out well! If you are wanting to add a little sweetener, I recommend maple syrup, honey or molasses.

Paleo “Bread” Base Recipe

Dry Ingredients:

  • 1 cup almond meal (I like this brand, because it contains unpasteurized almonds. The pasteurization of almonds leaves chemical residues in the almonds.)
  • ½ cup coconut flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • Spices (depends on desired flavor. For savory, I love Bragg’s Spice Mix available at Healthy Living)
  • 3 eggs
  • ¼ cup coconut oil
  • 3 medium bananas or 1 1/4 cup grated vegetables (ex. zucchini, carrots, beet, parsnip, etc.)

 

THAT IS IT!

Bake at 375 for 50 minutes

Here is an example of a variation. I used banana for the wet base, and added turmeric, rose hip powder, rose hips, and cinnamon. So good!
