A Recipe: 7 Layer Bars

Anyone else feeling the March entrapment? Where you feel like a fool for thinking spring has sprung from ONE forty degree day? We all should know better by now when that happens … snow is still possible. twenty degrees is still possible. a mild case of depression is inevitable.

For me, this is a time that calls for nothing more than flat out sweet goods, merely to take the edge off. The recipe I plan to share today may be an oldie but goodie in your book but for me it was MY VERY FIRST TIME making these bars of greatness.

7 layer bars

The steps are simple and the outcome is outrageous. It is perfectly paired with small children, a Friday night, a good movie, and a cozy fire. And I guess we will put the homemade ice cream sandwiches on the back burner for now…

Ingredients ::

1 package (9 crackers) of honey graham crackers

1 stick of unsalted butter

1 cup of finely chopped walnuts

1 cup semi sweet chocolate chips

1/2 cup white chocolate chips

1/2 cups butterscotch chips

1 cup toasted coconut

1 can (14 oz) condensed milk

Prepare ::

spread coconut on baking sheet and toast in a 350 degree oven for a few minutes. I say about 5 but watch closely so it does not burn. set aside.

crush crackers into a nice powder

mix in melted butter and stir until absorbed in cracker

spread mixture on a baking sheet lined with foil and sprayed with Pam

I pressed it out until it covered the bottom nicely… first picture in photo above.

Layer with (in this order ) walnuts, semi chocolate chips, white chocolate chips, butterscotch chips, toasted coconut, condensed milk.

Bake in a 350 degree oven for about 25 minutes or until top is browned.

Cool for 2 hours on a wired rack in the foil

cut, serve, enjoy.
