It’s the weekly struggle – what am I going to make for dinner this week? Summer is easy because you can always put something on the grill and it’s delicious! Winter – not so easy. I feel like I am in a food rut. I want to make new things but I want them to have limited ingredients because I have limited time. I also require them to be fairly healthy because my time at the gym these days are also limited.
When in doubt – I use my “Go to” recipe. Do you have one? It’s the one you’ve been making forever and chances are you ate it as a child. My “Go to” recipe is cornflake chicken.
Easy Cornflake Chicken
What You Need
- chicken – chicken breasts on the bone taste best (remove skin) or you could use boneless
- cornflake crumbs – they are in the breading section of the store – Kellogg’s makes them
- milk
- 1 egg
- paprika and other spices you like
- Salt and pepper
- Light Italian dressing or a flavor you like
Directions
Preheat the oven to 350 degrees.
Mix milk and egg in one bowl and all dry ingredients in a different bowl. Line a cookie sheet with foil. Dip chicken into milk mixture and then into dry and put on cookie sheet. Top the chicken with the dressing you like and put in the over for about 30 minutes and enjoy!!
