It’s officially fall. Time to get those ovens dusted off and ready for baking some delicious autumn treats. This recipe is so easy but the presentation makes it looks like it took hours. The cardamom custard is delicious and the delicate flavor of the pears complements it perfectly. The apple cider caramel sauce finishes it off with a touch more sweetness and fall flavor. If you aren’t a cardamom or pear fan, that’s okay! Switch it up and use cinnamon instead of cardamom and apples instead of pears. Any firm fruit and good spice would work. Furthermore, if you don’t want to make the caramel sauce, you don’t have to. Just put a dusting of confectioners sugar over the top of the pie before you serve it. Go ahead and make this dessert your own way. 

Pear and Cardamom Custard Bake

Preheat oven to 350

9-10 inch pie plate or pan (if using a 9 inch, I recommend baking on a cookie sheet in case of spillover.)

4 medium firm pears, peeled, cored, and sliced

4 eggs

5 tbsp melted butter

1 cup whole milk or half and half

1/3 cup plus 1 tbsp flour

1/3 cup plus 1 tbsp sugar

1/2 tsp cardamom powder 

2 tsp vanilla

¼ tsp salt

Cooking spray

Crack eggs into a blender and add melted butter, whole milk or half and half, flour, sugar, cardamom, vanilla, and salt. Blend until smooth. 

Arrange pear slices in a pie plate or pan sprayed with cooking spray. The way you set up the pear slices is up to you, but be aware that the arrangement should be visible after baking. 

After arranging the pear slices, I added a half-peeled and cored pear to the center of the pie for a prettier presentation.

Pour batter over the top and bake for 45-50 mins, until the custard is set.

Apple cider caramel sauce

1 cup of apple cider

4 tbsp butter

1/4 cup cream

2 tbsp Brown sugar

1/4 tsp pumpkin pie spice

Put all the ingredients into a small saucepan and bring just to a boil. Reduce and simmer until about a quarter of the liquid is left, stirring frequently, especially as the mixture thickens. This will take about 20 minutes. Remove from the heat and let cool until warm, then serve drizzled over individual pie slices. You can reheat both the sauce and the pie in the microwave after storing it in the fridge.

Top with some whipped cream, if desired. This delectable dessert is best served warm.
